What are the keyboard shortcuts to switch between the 7 Window Layouts? Also while I am at it, how do you save custom layouts to be able to reuse them in the future?

There is no shortcut

In your startup file create any additional layouts and then press Ctrl+U to save your current blend file as your default. You cannot directly save out a layout for use in another blend file

Thanks Richard. I actually found to switch, it’s Control + left or right arrow. I had to disable the original keyboard set up for that shortcut before it could work.
