Converting text to mesh

Hello i have got a question. Whenever I convert a text into a mesh the edges and faces are very random and not structured. How can i convert that that blender rearanges the faces,edges so the text can acutally be modeled. I remeber that there was a certain function for that but i have forgotten it.

Select vertices and X / ‘Limited dissolve’ may help
